Refrigerator Pickled Radishes Recipe
Equipment
- 1 8 oz Pickling Jar
- 1 Small Saucepan
Ingredients
- 1 lb radishes
- 3 ounces vinegar- Apple cider vinegar or vinegar of choice.
- 3 ounces water
- 1/2 tablespoon sea salt or kosher salt- Check the label to ensure your sea salt or kosher salt is pure, without anti-caking agents or iodine, as they can impact the flavor and look of your vegetables.
- 1/2 tablespoon sugar- For a low-carb or keto option try using monk fruit or other type of sweeteners.
- Optional- 1 bay leaf
- Optional- 1 tsp black peppercorns
- Optional- 1 garlic clove cut lengthwise
Instructions
- Slice radishes to preferred thickness.
- Place the sliced radishes in a sterile, clean 8oz jar.
- In a small pot, mix water, vinegar, sugar, and salt. Heat until simmering, ensuring the sugar and salt dissolve completely.
- Pour the hot brine over the radishes, covering them completely. Let the jar stand at room temperature for 1-2 hours, then seal it and refrigerate.
- Wait at least 24 hours before tasting; 48 hours is ideal for full flavor development. Keep refrigerated for 2-3 weeks.
Notes
- Fill the jar with radishes and cover with water.
- Measure the water after draining. This is your total liquid volume.
- Split this volume equally between vinegar and water for the brine.
