Armed with just a jar, some vinegar, and a few other ingredients, you’ll transform those hot jalapenos into crunchy, tangy delights that pack just the right punch.

Equipment

  • 1 8 oz glass Jar
  • 1 Small Saucepan

Ingredients
  

  • 3 medium jalapenos – Sliced into coins
  • 3 ounces vinegar – White vinegar or vinegar of choice.
  • 3 ounces water – See notes at the end of the recipe.
  • 1/2 tbsp sea salt or kosher salt – Check the label to ensure your sea salt or kosher salt is pure, without anti-caking agents or iodine, as they can impact the flavor and look of your vegetables.
  • 1/2 tbsp sugar – For a low-carb or keto option try using monk fruit or other type of sweeteners.
  • 1 small lime – Juice from one lime. I also use the zest to add extra lime flavor!

Instructions
 

  • First things first, let's rinse the jalapenos with water to remove any dirt. Slice into coins and remove the seeds. For extra heat, don't remove the seeds!

  • Place sliced jalapenos into a sterilized 8-ounce glass jar. Feel free to use any jar you have available. Add the lime juice and zest.

  • Combine water, white vinegar, sugar, and salt in a small pot. Heat over low heat, stirring until the sugar and salt have completely dissolved.
  • Carefully pour the hot brine over the jalapenos, making sure to completely submerge them.

  • Let the jar to cool to room temperature. Once cooled, seal it, and then place it in the fridge.

  • Allow the jalapenos to pickle for at least 24 hours for optimal taste, though 48 hours is recommended for the flavors to develop fully. Store them in the fridge for 2-3 weeks.

Notes

To accurately measure and reduce waste, follow these steps:
First, fill your jar with sliced jalapeños. Add water until they’re fully submerged.
Drain this water into a measuring cup to measure.
Discard the water. Finally, split the measurement equally between vinegar and water.
