- 1 16 oz Pickling Jar
- 1 Small Saucepan
Ingredients
- 1 pound celery Sliced into sticks or any shape you prefer.
- 7 ounces white wine vinegar White wine vinegar or vinegar of choice.
- 5 ounces water
- 1 tbsp sea salt or kosher salt- Check the label to ensure your sea salt or kosher salt is pure, without anti-caking agents or iodine, as they can impact the flavor and look of your vegetables.
- 1 tbsp sugar- For a low-carb or keto option try using monk fruit or other type of sweeteners.
- 1 tsp whole black peppercorns
- 2 cloves garlic
Instructions
- Slice the celery into the desired shape
- Add celery, garlic, and black peppercorns to a clean jar.
- In a small saucepan, combine the vinegar, water, sugar, and salt. Bring to a simmer, stirring until the sugar and salt have dissolved. Remove from heat and let cool slightly.
- Pour the vinegar mixture over the celery in the jar, making sure the celery is fully submerged.
- Let the jar sit at room temperature uncovered for 1-2 hours, then seal and refrigerate.
- Allow the celery to pickle for at least 24 hours for optimal taste, though 48 hours is recommended for the flavors to develop fully. Store them in the fridge for 2-3 weeks.
