  • 1 8 oz Pickling Jar
  • 1 Small Saucepan

Ingredients
  

  • 10-12 fresh habanero peppers
  • 4 ounces white vinegar- White vinegar or vinegar of choice.
  • 2 ounces water
  • 1/2 tbsp sea salt or kosher salt – Check the label to ensure your sea salt or kosher salt is pure, without anti-caking agents or iodine, as they can impact the flavor and look of your vegetables.
  • 1/2 tbsp sugar – For a low-carb or keto option try using monk fruit or other type of sweeteners.
  • 1 clove garlic lightly smashed
  • 1/2 tsp mustard seeds
  • 1/2 tsp Black peppercorns
  • 1/2 medium Lime (optional) Try adding a little lime juice and zest (1/2 lime) to really perk up the flavor!

Instructions
 

  • Slice the habanero peppers into 1/4-inch rings or your preferred shape. Be sure to wear gloves when handling the hot peppers. I learned this the hard way!

  • In a small saucepan, combine the vinegar, water, sugar, and salt. Bring the mixture to a boil over medium-high heat, stirring occasionally to dissolve the sugar and salt.
  • Remove the vinegar mixture from the heat and let it cool slightly, about 5 minutes.
  • In a clean jar or other airtight container, layer the sliced habanero peppers, garlic halves, and peppercorns.

  • Carefully pour the slightly cooled vinegar mixture over the peppers, making sure they are fully submerged. Leave about 1/2 inch of headspace at the top of the jar.

  • Allow to cool to room temperature then put the lid on and refrigerate. Allow 24-48 hours for the peppers to absorb the brine for intense flavor. This recipe will last for 2-3 weeks.
