- 1 Small Saucepan
Ingredients
- 1 large cucumber
- 6 ounces vinegar- White vinegar or vinegar of choice.
- 4 ounces water
- 1 tablespoon sea salt or kosher salt- Check the label to ensure your sea salt or kosher salt is pure, without anti-caking agents or iodine, as they can impact the flavor and look of your vegetables.
- 1 tablespoon sugar- For a low-carb or keto option try using monk fruit or other type of sweeteners.
- Optional- 1 tsp of crushed red pepper flakes
- Optional- 1 tsp black peppercorns
- Optional- 2 garlic cloves cut lengthwise
Instructions
- Slice the cucumber to your desired thickness.
- Place the cucumber slices in a sterilized jar.
- In a pot, mix water, vinegar, sugar, and salt. Bring to a boil, stirring until the sugar and salt dissolve.
- Pour the brine over the cucumbers, ensuring they're fully submerged.
- Allow the jar to cool at room temperature for about 1-2 hours. Then seal the jar and refrigerate it. For the best flavor, let the cucumber pickle for at least 24 hours. Store in the fridge for up to 2-3 weeks.

Spicing Up Your Recipe!
After creating so many wonderful pickling recipes, I’ve realized that the excitement really lies in the spice blend you choose. It’s like painting with flavors – each spice adds a unique stroke to the canvas.
Here are some of my favorite aromatic additions that have transformed my batches of pickled vegetables into a gourmet experience:
- Fresh Dill: Nothing beats the classic combo of cucumbers and dill. It brings a refreshing and slightly tangy flavor that’s perfect for pickles.
- Mustard Seeds: I love the subtle, tangy kick these little seeds provide. They add a lovely complexity to the crisp cucumbers.
- Crushed Garlic Cloves: A staple in my pickling. Garlic infuses a rich, savory depth that complements the cucumbers beautifully.
- Red Pepper Flakes: For when I want a little fiery kick. They add a spicy dimension without overpowering the cucumbers’ natural flavor.
- Coriander Seeds: Their warm, citrusy undertone adds an interesting twist and works wonders with the overall flavor.
- Bay Leaves: They contribute a mild, herbal background note that adds depth to the pickles.
- Whole Cloves: Just a few cloves can really elevate the taste, adding a warm, aromatic sweetness.
Feel free to play around with different spices and vinegars when pickling. Every jar you create is more than just ingredients; it’s a canvas for your culinary creativity.
Your choice of vinegar can significantly change the character of your pickles, lending them a range of flavors from bold and intense to mellow and delicate.
