- Optional- 1 tsp of whole black peppercorns
- Optional- 1 tsp of crushed red pepper
- Optional- 1/2 ounce of grapefruit
Instructions
- Prepare Your Onion: Start by trimming the ends and then cut it in half. Slice the red onion thinly and separate the layers.
- Get Your Jar Ready: Place the sliced onions into a clean, sterilized jar.
- Create the Brine: In a saucepan, combine the water, vinegar, salt, sugar, and any other spices. Bring the mixture to a boil, ensuring the salt and sugar are fully dissolved.
- Combine the brine and the onions: Pour the hot brine over the onions in the jar, leaving room for the lime and lemon juice.
- Lime and lemon juice: Add the lime and lemon juice, then top off with additional brine if needed to ensure the onions are completely covered.
- Cool to room temperature: Let the jar cool to room temperature, then seal and refrigerate for at least 2 hours.
