These pickled treats are more than just colorful additions to a plate; they’re a perfect blend of the tangy, sweet, and spicy flavors that make Asian cuisine so irresistible.

This easy yet impactful pickling process really opens up a new world of taste sensations.

Asian Pickled Carrots Recipe

Equipment

  • 1 16 oz Pickling Jar
  • 1 Small Saucepan

Ingredients
  

  • 1 pound Carrots
  • 7 ounces Rice Vinegar
  • 5 ounces Water
  • 1 tbsp Sea Salt- It's best not to use table salt since it has iodine and anti-caking additives, which can cause the pickling liquid to turn cloudy and change the color of what you're pickling.
  • 1 tbsp Sugar- For a low-carb or keto option try using monk fruit or other type of sweeteners.
  • 1-2 tbsp Soy Sauce
  • 1 tsp Sesame Oil
  • 1/2 tsp White peppercorns
  • 1/2 tsp Szechuan Peppercorns
  • 1 clove Garlic
  • 1 small Thai Chili Peppers

Instructions
 

  • Start by slicing the carrots into sticks or any shape you prefer.

  • In your jar, add carrots Thai chili peppers, 1 large garlic clove, soy sauce and sesame oil.

  • In a saucepan, bring vinegar, water, salt, sugar, and spices to a boil. Mixing until salt and sugar are dissolved.

  • Pour the hot brine over the carrots, making sure they are fully submerged.

  • Set aside the uncovered jar and allow to cool to room temperature, typically 1-2 hours. Once cooled, cover and place jars inside the refrigerator.
  • Store the jars in the refrigerator for at least 24 hours to allow the flavors to develop. Your pickled carrots can be stored in the fridge for 2-3 weeks.

Notes

This recipe is wonderfully adaptable. Feel free to adjust the ingredients and quantities to your liking.
More sugar for sweetness, extra chilies for heat, or different kinds of vinegar for varied tang are all great options.
