- 1 16 oz Pickling Jar
- 1 Small Saucepan
Ingredients
- 1 pound Carrots Sliced into sticks or any shape you prefer.
- 5 Ounces Apple cider vinegar You can also use regular white vinegar or white and red wine vinegar.
- 5 Ounces Water
- 1 tbsp Sea salt or kosher salt- Check the label to ensure your sea salt or kosher salt is pure, without anti-caking agents or iodine, as they can impact the flavor and look of your pickles.
- 1 tbsp Sugar- For a low-carb or keto option try using monk fruit or other type of sweeteners.
- Optional- 1 tsp crushed red pepper
- Optional- 1-2 garlic cloves
- Optional- Flavor with citrus zest (lemon, lime, orange)
Instructions
- Preparing the Carrots: Cut the carrots into your desired shape (sticks, julienne, coins, or ribbons).
- Set Up the Jar: Arrange the chopped carrots neatly in a sterilized jar.
- Make the Brine: In a pot, add the water, apple cider vinegar, sugar, and salt. Warm the mixture until it begins to simmer, ensuring everything is dissolved.
- Brine to Veggies: Slowly pour the warm brine into the jar, covering the carrots completely.
- Cool Down: Allow the jar to sit at room temperature for a couple of hours, then seal it up and move it to the fridge.
- Tasting Time: Ideally, give the veggies at least 24 hours to pickle, though 48 hours will deepen the flavor even more. They're good in the fridge for 2-3 weeks.
